Hello, my clients are predominently institutional food service operations (schools, universities, hospitals, etc.). When it comes to meats, ther budgets are generally a bit limited for any significant price difference in the ingredients they purchase. However, there are many who do purchase the lower end cuts (ground beef, flatiron, etc.) from a few local farms. I would also like to see if you might like to talk to you about an event that I'm helping to facilitate to promote the Last Green Valley (NE CT), have you heard of that org? It's called the "Tastes of the Valley" and it links the region's best chefs and farmers for a high end great fund raiser. Can we connect through regular email? Our farm is near Storrs, in Northeast Connecticut. Below is the comment I previously left for you.

In your business, do you ever have occasion to source locally grown packaged meats? We see a lot of places claiming to go "natural" or "sustainable" but still buying meats trucked in from the West Coast. I don't see how that sustains local farms. Where do your clients typically get their meats?
